			<content:encoded><![CDATA[<p>Laughing bird shrimp are a sustainable shrimp from Costa Rica. Essentially it’s a rock shrimp. The shrimps are small, supple and sweet. They are sautéed in white wine, then baked in a crust of garlic, herbs, and breadcrumbs. This dish is best served with fresh lemon juice, good friends, and a couple bottles of white wine.</p>
<p><strong>Butter dough topping</strong></p>
<p>I stick of butter</p>
<p>1 garlic clove, minced</p>
<p>3 garlic cloves, roasted</p>
<p>1 lemons zest</p>
<p>½ of a lemons juice</p>
<p>1T. chopped chives</p>
<p>1T. chopped parsley</p>
<p>1t. paprika</p>
<p>2 oz. white wine</p>
<p>½C. panko</p>
<p>s/p to taste</p>
<p>Mix everything except panko in mixer until smooth. Gradually add panko to make a dough. Wrap the dough in plastic wrap. This can be refrigerated up to 48 hours before serving.</p>

<p><strong>Baked shrimp</strong></p>
<p>1 pound laughing bird shrimp</p>
<p>2T. garlic oil</p>
<p>½C. white wine</p>
<p>s/p to taste</p>
<p>prepared dough</p>
<p>Place the laughing bird shrimp in 8 inch cast iron skillet. Drizzle garlic oil and white wine over shrimp. Season with salt and pepper. Cook the shrimp through. Shape your dough mixture to match your skillet, about 1/8 inch thick, then place the dough on top of the shrimp in the skillet. Finish in the broiler until golden and crispy. Serve immediately with fresh lemons. Serves about 6 people.</p>
